Caribbean cuisine is an incredible blending of tropical flavors and multicultural influences that have been enhanced over centuries. Food in the Caribbean is based on mostly African, Spanish, Chinese, and East Indian flavors but generally are crossovers of the cuisines from the rest of the world.

Seasoned with garlic and onions and creole spice. Infused with bay leaves, thyme, scotch bonnet, and coconut milk. It is sometimes referred to as rice and peas if made with pigeon peas or yellow peas. This is very simple, easy, cheap and nutritious dish to make that goes with everything.

11. Tropical Sangria

    My son worked in Trinidad over the summer and had been going on about how he missed “doubles”. So this morning I set about making your recipe for him. He swears they taste absolutely authentic and I must say they are fabulous. So rich and spicy but not hot. The shells are wonderfully chewy and moist and your mango chutney really livens them up. This was my first time on your site and I immediately signed up. Can’t wait to try more recipes.

    My son just married an American who had her first taste of bajan/ Caribbean food and wants more! He asked for recipes and couldn’t under my..” a little bit of this, and a lot of that” so I scoured the internet to find him suitable recipes to try and came across your site. Your recipes are the closes I found to describe a “little bit of this and a lot of that”. There are a lot of receipt here that I haven’t tried so I’m going to go through every one of them. Thank you so much for your dedication to food and the knowledge you pass on freely. I can’t wait until my next Caribbean theme party! Do you do deserts as well?

    Thank you for a wonderful recipe site. Just found it. I am Jamaican, married to a German. We have been back to Jamaican numerous times and my husband loves the food. Living in Jamaica I didn’t have to do anything as we had maids. Coming to live in the USA I had to learn to do laundry and cook. I love to cook! I will do some of your recipes here – first shrimp creole then smothered chicken ….. plus others. Shrimp defrosting. I need recipes that are vegan and gluton free for my nephew. I can eliminate butter in most recipes. My husband always claim “How much do you expect me to eat”. Now he will die with your recipes.
